This is where I will be writing about different foods.  Some will be healthy, some not so healthy but, oh so good.  




I made this chicken; tomatoes and mushroom with gorgonzola sauce again tonight.   I hit it.  I got it to taste exactly like the one I had at Johnny Corinos.  I'm in love!   Side with cheesy bread and salad yum!
You always know you had a good meal when you really want a cup a coffee afterward.  :)

This is a very easy recipe.   You can add or omit anything with this type of recipe.  
The sauce is very simple to do.   

Gorgonzola Sauce: 
3 oz gorgonzola cheese fresh not crumble. 
1/3 c milk
1 tsp salt
3 tbsp.butter
1/4 cream
1/3 c grated parmesan

Start the sauce before you start the noodles.  Whisk sauce on medium high to melt cheese.  Then turn it down to low and keep whisking off and on for 10-15 minutes.
Put some Extra virgin olive oil on pan with 2 tsp of butter.   Saute mushrooms and tomatoes and chicken.  Turn down low and let sit while pasta is cooking. 
When pasta is ready, take pasta from water directly to pan so you get some of the pasta water.  Mix it all really good before pouring cheese sauce on top.  Serve right away.  Sprinkle some parmesan on top. 



Croque Monsieur 
The recipe for the sauce is very easy to make.   You can check out the recipe as well as sauce on Croque Monsieur Recipe : Ina Garten : Food Network I split the recipe in half when making for smaller portion.   You can use any type of meat.  I used 1 slice of ham and 1 slice of turkey.   I made Matt a sandwich and Jess and I had an open face sandwich.   Will be making this again.
